Easy Vegan Three-Ingredient Pasta & Always Pan Review

Now that I am the personal chef for Miss Livvy, I am always looking for ways to make healthy food for her. I love cooking for her. The way her little face lights up when she sees her food coming. Just melts my heart. I was so glad when I found the chic Always Pan from Our Place. I’ve been cooking with the Always Pan for a few months now and it’s my absolute favourite! Now onto the three-ingredient pasta recipe. This is my go-to pasta dish on busy weekday nights when I need to quickly whip a meal up. Our whole family loves it, including Livvy! I use the Always Pan to sauté, the steamer basket to boil/strain the pasta and as a spatula rest.

WHAT YOU’LL NEED:

  • Five medium ripe tomatoes on vine
  • Two small onions or one medium onion
  • Handful of mushrooms (or sub for other veggies)
  • Rigatoni 17 pasta
  • Extra virgin olive oil, red pepper flakes and S&P to season. Skip red pepper flakes for kids.

INSTRUCTIONS:

  1. Heat 1-2 tablespoon of olive oil in the pan on medium-high heat. Add tomatoes and onions to sauté until softened, 6-8 minutes. Add the mushrooms and continue to sauté for another 6-8 minutes.
  2. Pour pasta sauce onto a plate.
  3. With the steamer basket inside the pan, bring salted water to a boil. Add the pasta and cook al dente, about 10 minutes or according to package instructions.
  4. Drain the pasta and add it to the sauce. Toss gently to combine. Add red pepper flakes, S&P to season.
